Waffle Goodness

Waffles on Christmas morning were a must. Fresh from the waffle maker and waiting for butter and homemade syrup. Mom never disappointed.

I carried on the tradition to my kids and when frozen waffles became popular, our family just said NO!

I never thought about posting this recipe until this morning when I was craving a waffle and telling my daughter via Facetime that she said, "Send me the recipe, I miss those waffles". 

That made me think of sharing with everyone. 

This is a basic recipe. It can be changed in many ways. At times we have added bananas, or chocolate chips, or both. 

INGREDIENTS:

2 cups milk

2 eggs

1 Tablespoon sugar

2 cups flour

2 teaspoons baking powder

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 cup butter

Mix together the sugar and eggs. Add a cup of milk and mix. Add a cup of flour, mix. 

Add the second cup of milk and stir into batter.

Add the baking powder, cinnamon, nutmeg and a pinch of salt to remaining 1 cup of flour. Stir together and add to waffle batter. Stir.

Melt the 1/2 cup of butter and mix into batter.

Heat the waffle iron and when ready add batter.

Again, it is easy to make this waffle your own. Add your favorite toppings or mix fruit into the batter. Either way, this waffle is always a welcome treat on Christmas morning.
