Chocolate Toffee

I love toffee. This recipe is easy but I would make a few changes the next time I make, which will be in Saturday when the new candy thermometer arrives. As you know from my video on FB I tried to get one today at Walmart, but no luck. Then I tried Safeway, no luck. So...I can not make the toffee bites until I get the thermometer on Saturday from Amazon.

So let's move on...how did I break 2 thermometers in a day? Beats me. But you need one for candy making.

I like this recipe except that the semi sweet chocolate chips were a bit much. When I make the toffee bites I am going to mix it up. Not sure if I will do half milk chocolate or half butterscotch. The full semi sweet was a bit over powering for my taste buds. BUT the toffee was spot on!

INGREDIENTS:

1 1/4 cup (2 1/2 sticks) butter
1 1/4 cup sugar
1/2 teaspoon pure vanilla extract
Pinch of salt
2 cups semi sweet chocolate chips
1/2 cup toasted pecans
Flaky sea salt

Line a baking sheet with parchment paper.

In a saucepan add your butter, sugar, vanilla and salt. Bring to a boil. you will need to stir this constantly. You want to reach 285° which took me 5 minutes but you also want to have a rich amber color. The 5 minutes and temperature did not result in a rich amber. You may want to give it additional time for the coloring, but the taste for following the directions was right on.

Once you reach the temperature, 285° or color, pour onto the baking sheet. top with the chocolate chips and in 2 minutes spread them with a spatula until all are melted together. Sprinkle on your pecans followed by Flaky Sea Salt. Let cool. 

Put in the refrigerator for a few hours to fully cool and harden the chocolate. Cut into pieces.

Make sure to cut your candy on a cutting boards. You will need a large sharp knife. As you see with the picture above I put the pieces in a plastic tin to put in refrigerator to store for a week before making candy tins for family and friends.
